Our Mushrooms
We cultivate our mushrooms in a grow tent right here on The Gothic Farmstead. We grow a variety of oyster mushrooms including pink, golden, pohu, grey dove, and pearl. We also grow lion's mane mushrooms. We proudly purchase our mushroom spawn from Wisconsin-based company, Field & Forest Products. In addition to growing and cultivating oysters and lion's mane mushrooms, Diane is a certified mushroom harvester and is qualified to forage and sell wild mushrooms to food establishments.
This means that when they are in season, we have lobster, maitake (aka hen of the woods), chicken of the woods, morels, chanterelles, and more all foraged from our pasture and available for sale.

Oyster Mushrooms
Oyster mushrooms have been used in traditional medicine for centuries. According to some studies, oysters are high in antioxidants and boost the immune system.
Oyster mushrooms are very versatile. Some of our favorite ways to prepare oyster mushrooms is by chopping them or shredding them up and sautéing them in the pan with just a little bit of oil and some seasoning. Some varieties of oysters, like Grey Dove, contain a meatier consistency and make an excellent meat substitute in sauces, lasagna and more!
Lion's Mane Mushrooms
Some studies have shown that lion’s mane mushrooms contain Neurotrophic properties which can promote nerve growth factors essential for optimal brain function. They may protect against dementia, reduce mild symptoms of anxiety and depression, and help repair nerve damage. Lion’s mane can also reduce inflammation and oxidative stress, protect the gut, and reduce high blood pressure. More studies must be done to support these claims. Lion’s mane mushrooms have a soft texture, and they pull apart easily to make a delicious replacement protein in tacos, sandwiches, or bbq. They are also delicious sautéd. Simply cook them on medium to low heat with a small amount of butter or oil.
Where To Find Our Mushrooms
Maitake Mushrooms (Hen of the Woods)
Maitakes have a rich flavor as unique as it looks. It is delicious simply sauteed in butter or oil, browning its delicate edges to your desired degree of crispness. It pulls apart beautifully resembling pulled chicken, and makes an excellent meat replacement due to its thick texture. We enjoy this seasonal treat in soups and ramen, in tacos, on sandwiches (in addition to burgers or in place of burgers), as a bacon replacement, and more. These mushroom grow at the base of trees, particularly old growth oaks or maples. It is typically found in late summer to early autumn.
​​​​You can find our mushrooms almost daily on our roadside farm stand. We also sell at the Pine City Farmers Market every Friday and Saturday from June through October. Additionally, we sell our mushrooms through a weekly online farmers market called North Circle Online Farmers Market! ​​
Soon, we will have online purchasing options for fresh and dried mushrooms.
Our mushrooms are in fully compostable packaging. Simply remove the label and toss it in your kitchen or yard compost. Who knows, you may even end up with mushrooms in your compost!
